Okra (evoo), roasted brussel sprouts (evoo, s&p), baked white pumpkin, and chicken pan fried in coconut oil with paprika. First time for me cooking okra and white pumpkin. Okra success; the pumpkin was okayyyy. I ended up mashing it and adding pumpkin pie spice. Lol. (Taken with Instagram)

Dinner! I have no idea what’s up with my taste buds lately but sometimes you just gotta go with it. My omelette had broccoli and green bell peppers cooked with cayenne pepper and topped with sriracha. The chicken was cooked with cumin and jalepenos. Earlier I had cottage cheese and cayenne pepper and I’ve gone through ~15 jalepenos this week…. (Taken with Instagram)

Lettuce and spinach, homegrown cucumber, homegrown grape tomatoes, sprouts, lightly cooked corn and homegrown green bell pepper, and grilled chicken + spices (cayenne, garlic, oregano).
Glad I made this a second time! I got a little heavy handed when adding the cayenne though XD. That’s okay! I’ve been in a spicy kick lately so it was tasty :) woop.
I didn’t really feel like cooking for lunch today. So I just grabbed some veggies :) easy peasy and still delicious.

Mozarella, chicken, broccoli, and red pepper quesadilla. Some greek yogurt + hot sauce on the side :] I made too much insides, soooo I just had that on the side, too haha.
Similar to yesterday’s lunch, but so different. I had chicken, brown rice, and avocado but I added homemade salsa (tomato, onion, jalapeño, garlic powder, cilantro, chipotle powder), and put it all over about a cup and a half of lettuce. It was yummyyyy. And spicy o.o if I made it again I wouldn’t use rice cause eh. It was not essential for the whole dish. More lettuce would’ve been awesome :3

Yum yum. Tortilla wrap, tomato sauce, grated zucchini, spinach, grape tomatoes, and fat free ricotta cheese. I ended up just folding it in half after I baked it because it was yummier that way ^-^ it was around 185 calories and soo good. It felt so wrong to eat but it wasn’t :)
Then I had chicken and for the first time, eggplant!! I really like eggplant. Reminds me of zucchini. I liked the squishy-ness of it. I did just a basic pan-grill to see what it tastes like and then I started to look at recipes and oh my gosh- eggplant is so versatile! I think this is the beginning of a flourishing relationship :) I have a lot to try out.

Dinner! Not the best picture but it’ll do. Quinoa with broccoli, mushroom, onion, garlic, and thyme. Then some chicken and spices (powdered garlic, onion flakes, and rosemary). The spices burned a bit :/
